Although set up by Chinese merchants, the chinese word ‘pansít’ became a spanish word ‘panciteria’ due to the Spanish colonial rule in the Philippines at that time. Although millenials and ex-gens now prefer eating in more modern food establishments (e.g. Mcdonalds, Jollibee, Shakeys) or other culture inspired establishments (e.g. Samgyup, French/ Italian restos), there are still a lot of existing panciterias in Santa Cruz.
